EMPLOYMENT

2000-present      Chef/ Manager, CW Hospitality: Habana/Ocean Drive

Responsibilities include hiring, contract negotiation and training of staff.  Supervised ordering and inventory levels, including food costs, and menu development.  I furthered the development of these two highly acclaimed restaurants through the implementation of tight cost controls, the maintenance of a proficient kitchen, high quality food production and strategic planning for future growth. 

 

1997-2000         Line cook, TBQ’s Other Place/Market Place

Aided chef in daily operations of kitchen including catering large parties, and menu development.  Honed cooking skills and further attained the knowledge and confidence to expedite duties and responsibilities effectively within the kitchen.

 

1994-1997         Line cook, Windsor Yacht Club

Responsible for daily specials, food preparation, expediting large parties, controlling inventory levels, and overseeing the kitchen in absence of the executive chef.

 

 

 1989-1999        Manager, J Dee’s Summerhouse

Managed daily operating procedures including the supervision of all open and closing duties, scheduling, and ordering.  Succeeded in establishing tight cost controls on labour and inventory levels while maintaining consistent quality product, thereby leading to the company’s growth and dominance of the market.
